Yields: 6 servings
Ingredients:
- 1 cup white rice
- 2 poblano chiles, deseeded and deveined
- 1 cup fresh cilantro (whole sprigs)
- 2 cups chicken broth or vegetable broth
- 1 garlic clove
- ¼ onion
- 1/2 cup corn kernels
- 1 tablespoon vegetable oil
- Salt and pepper to taste

Instructions for the green rice:
- Blend the chiles with the broth, garlic, cilantro, and onion. Add salt and pepper to taste, then set aside.
- In a pot, lightly toast the rice in the oil for just a few minutes, being careful not to burn it.
- Pour in the blended mixture, add the corn, and stir until combined.
- Once the mixture boils, reduce the heat to low and cook the rice for 15 minutes, or until all the liquid has evaporated.
