Green Rice with Poblano Chile

Make delicious green rice with poblano peppers, cilantro, and corn in just 30 minutes. A vibrant and flavorful side dish for any meal!

Yields: 6 servings

Ingredients:

  • 1 cup white rice
  • 2 poblano chiles, deseeded and deveined
  • 1 cup fresh cilantro (whole sprigs)
  • 2 cups chicken broth or vegetable broth
  • 1 garlic clove
  • ¼ onion
  • 1/2 cup corn kernels
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions for the green rice:

  1. Blend the chiles with the broth, garlic, cilantro, and onion. Add salt and pepper to taste, then set aside.
  2. In a pot, lightly toast the rice in the oil for just a few minutes, being careful not to burn it.
  3. Pour in the blended mixture, add the corn, and stir until combined.
  4. Once the mixture boils, reduce the heat to low and cook the rice for 15 minutes, or until all the liquid has evaporated.
