Pesto Pasta Salad

Prep time: 15 minutes

Cooking time: 10 minutes

Serves: 6

1 quart of cooked red lentil rotini

2 (9 1/2 ounce each) packages chopped salad

Fresh Express Twisted Pesto Caesar Chopped Salad Kits

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup halved grape tomatoes

1/2 cup roasted walnuts

Prepare red lentil rotini according to package directions; chill for 15 minutes.

Mix rotini and one sachet of dressing from the salad kits in a bowl. Season with salt and pepper and mix well. Refrigerate, covered, for 30 minutes or until rotini are cold.

In a large bowl, toss the lettuce from both salad kits with the remaining packet of salad dressing.

Add rotini and tomatoes; toss well. Sprinkle with the garlic brioche croutons, grated Parmesan cheese from the salad kits, and walnuts to focus on taste.

Substitution: Use red lentil rotini instead of traditional rotini.
